- 1 cup ripe strawberries, hulled and halved
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup balsamic vinegar
- 2 tablespoons honey
Instructions
- Marinate the Chicken: In a bowl or resealable bag, combine chicken breasts with olive oil, salt, and pepper. Let marinate for at least 30 minutes.
- Prepare the Strawberries: Wash and hull strawberries, then slice in half.
- Make the Sauce: In a small saucepan over medium heat, mix balsamic vinegar and honey. Simmer for about 5 minutes until slightly thickened.
- Preheat Grill: Heat grill to medium-high (375°F/190°C).
- Grill: Place marinated chicken on one side of the grill and strawberries on the other. Grill chicken for 6-8 minutes per side or until it reaches an internal temperature of 165°F (75°C). The strawberries should soften and caramelize.
- Serve: Drizzle balsamic sauce over grilled chicken and strawberries before serving.
