Description

This savory French onion beef roast is perfect for cozy dinners.


Ingredients

  • 34 lb boneless beef chuck roast
  • 1/4 cup all-purpose flour
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 large yellow onions, thinly sliced
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth (low-sodium preferred)
  • 1 (10 oz) can condensed French onion soup
  • 2 tbsp Worcestershire sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • 2 bay leaves
  • Optional for serving: Crusty bread, 1-2 cups shredded Gruyere or Provolone cheese, Fresh parsley, Fresh thyme sprigs

Instructions

  1. Season the beef roast with salt and pepper, then coat with flour.
  2. In a large pot, heat olive oil and butter over medium-high heat. Sear the roast on all sides.
  3. Remove the roast and add onions, cooking until soft and caramelized.
  4. Add garlic and cook for another minute.
  5. Return the roast to the pot. Add beef broth, French onion soup, Worcestershire sauce, balsamic vinegar, brown sugar, thyme, and bay leaves.
  6. Bring to a simmer, cover, and cook in the oven at 325°F for 3-4 hours.
  7. Once done, serve beef with broth spooned over and top with cheese and fresh herbs.
