This savory French onion beef roast is perfect for cozy dinners.
Ingredients

- 3–4 lb boneless beef chuck roast
- 1/4 cup all-purpose flour
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 3 large yellow onions, thinly sliced
- 1 large sweet onion, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth (low-sodium preferred)
- 1 (10 oz) can condensed French onion soup
- 2 tbsp Worcestershire sauce
- 2 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- 2 bay leaves
- Optional for serving: Crusty bread, 1-2 cups shredded Gruyere or Provolone cheese, Fresh parsley, Fresh thyme sprigs
Instructions
- Season the beef roast with salt and pepper, then coat with flour.
- In a large pot, heat olive oil and butter over medium-high heat. Sear the roast on all sides.
- Remove the roast and add onions, cooking until soft and caramelized.
- Add garlic and cook for another minute.
- Return the roast to the pot. Add beef broth, French onion soup, Worcestershire sauce, balsamic vinegar, brown sugar, thyme, and bay leaves.
- Bring to a simmer, cover, and cook in the oven at 325°F for 3-4 hours.
- Once done, serve beef with broth spooned over and top with cheese and fresh herbs.

- This dish can be prepared a day in advance and reheated.
