Description

Delicious garlic ginger chicken stir fry, perfect over rice or in tortillas.


Ingredients

  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cut the chicken breasts into bite-sized cubes.
  2. In a bowl, mix soy sauce, minced garlic, ginger, brown sugar, and red pepper flakes. Add chicken and marinate for at least 30 minutes.
  3. Heat oil in a large skillet over medium-high heat. Sear the marinated chicken until golden brown (6-8 minutes).
  4. Remove chicken from the pan; reduce heat to medium-low. Whisk cornstarch and water until smooth; stir into the marinade in the pan until thickened (about 1 minute).
  5. Return the chicken to the pan and toss until well coated. Simmer for an additional 2-3 minutes.
  6. Garnish with green onions before serving hot over rice or in tortillas.

Notes

  • For added spice, you can increase the amount of red pepper flakes.
