Description
Delicious garlic ginger chicken stir fry, perfect over rice or in tortillas.
Ingredients

- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, minced
- ¼ cup low-sodium soy sauce
- ¼ cup brown sugar
- 1 tsp red pepper flakes (adjust to taste)
- 1 tbsp cornstarch
- 2 tbsp water
- 2 green onions, chopped (for garnish)
Instructions
- Cut the chicken breasts into bite-sized cubes.
- In a bowl, mix soy sauce, minced garlic, ginger, brown sugar, and red pepper flakes. Add chicken and marinate for at least 30 minutes.
- Heat oil in a large skillet over medium-high heat. Sear the marinated chicken until golden brown (6-8 minutes).
- Remove chicken from the pan; reduce heat to medium-low. Whisk cornstarch and water until smooth; stir into the marinade in the pan until thickened (about 1 minute).
- Return the chicken to the pan and toss until well coated. Simmer for an additional 2-3 minutes.
- Garnish with green onions before serving hot over rice or in tortillas.
Notes
- For added spice, you can increase the amount of red pepper flakes.
- This dish is versatile and can also be served with vegetables.
