- 2 large egg whites
- 2 1/2 cups powdered sugar
- 3 cups finely ground almonds
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/8 teaspoon salt
Instructions
- Beat the egg whites in a clean bowl until foamy, then gradually add the powdered sugar and keep beating until the mixture is thick and glossy.
- Reserve about 1/3 cup of the glossy mixture to use later as the glaze for the tops.
- Fold the ground almonds, cinnamon, vanilla extract, almond extract, and salt into the remaining mixture until a sticky dough forms.
- Wrap the dough and chill it for about 1 hour so it becomes easier to handle.
- Dust your surface with powdered sugar and roll the dough to about 1/4-inch thickness.
- Cut out star shapes with a cookie cutter, wiping the cutter between cuts if needed.
- Place the stars on a parchment-lined baking sheet and spread a thin layer of the reserved glaze over the tops.
- Bake at 300°F for 12 to 15 minutes, just until the tops are set and the cookies are lightly baked without browning too much.
- Let the cookies cool completely so the glaze firms up and the centers stay chewy.
