Description

Delicious almond cookies that are perfect for any occasion, especially the holidays!


Ingredients

  • 2 large egg whites
  • 2 1/2 cups powdered sugar
  • 3 cups finely ground almonds
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/8 teaspoon salt

Instructions

  1. Beat the egg whites in a clean bowl until foamy, then gradually add the powdered sugar and keep beating until the mixture is thick and glossy.
  2. Reserve about 1/3 cup of the glossy mixture to use later as the glaze for the tops.
  3. Fold the ground almonds, cinnamon, vanilla extract, almond extract, and salt into the remaining mixture until a sticky dough forms.
  4. Wrap the dough and chill it for about 1 hour so it becomes easier to handle.
  5. Dust your surface with powdered sugar and roll the dough to about 1/4-inch thickness.
  6. Cut out star shapes with a cookie cutter, wiping the cutter between cuts if needed.
  7. Place the stars on a parchment-lined baking sheet and spread a thin layer of the reserved glaze over the tops.
  8. Bake at 300°F for 12 to 15 minutes, just until the tops are set and the cookies are lightly baked without browning too much.
  9. Let the cookies cool completely so the glaze firms up and the centers stay chewy.
