Description

Delicious and hearty chicken soup with garlic, carrots, celery, and topped with Parmesan cheese.


Ingredients

  • 4 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 2 medium carrots, diced (about 1 cup)
  • 2 celery stalks, diced (about 1 cup)
  • 1 lb boneless chicken thighs
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • ¼ cup freshly grated Parmesan cheese (for serving)

Instructions

  1. Prepare your ingredients by chopping garlic, carrots, and celery.
  2. In a large pot over medium heat, sauté the garlic in olive oil until fragrant (about 1 minute).
  3. Add the chopped carrots and celery; cook until softened.
  4. Pour in the chicken broth and add the boneless chicken thighs. Bring to a gentle simmer.
  5. Stir in Italian seasoning along with salt and pepper.
  6. Simmer for about 30 minutes or until the chicken is cooked through.
  7. Shred the chicken directly in the pot using two forks; stir well.
  8. Serve hot topped with freshly grated Parmesan cheese.

Notes

  • You can substitute the chicken thighs with chicken breasts if desired.
