- 1 lb boneless chicken thighs
- 2 tsp Italian seasoning
- Salt and pepper to taste
- ¼ cup freshly grated Parmesan cheese (for serving)
Instructions
- Prepare your ingredients by chopping garlic, carrots, and celery.
- In a large pot over medium heat, sauté the garlic in olive oil until fragrant (about 1 minute).
- Add the chopped carrots and celery; cook until softened.
- Pour in the chicken broth and add the boneless chicken thighs. Bring to a gentle simmer.
- Stir in Italian seasoning along with salt and pepper.
- Simmer for about 30 minutes or until the chicken is cooked through.
- Shred the chicken directly in the pot using two forks; stir well.
- Serve hot topped with freshly grated Parmesan cheese.
Notes
- You can substitute the chicken thighs with chicken breasts if desired.
