This delicious blueberry French toast is a perfect breakfast treat!
Ingredients

- 4 slices thick brioche or challah bread
- 2 large eggs
- 1 cup whole milk (or dairy alternative)
- 1 tsp ground cinnamon
- 2 tbsp granulated sugar
- 1 cup fresh blueberries (or frozen)
- ½ cup plain Greek yogurt
- 2 tbsp unsalted butter
Instructions
- In a bowl, whisk together eggs, milk, sugar, and cinnamon until frothy.
- Heat butter in a nonstick skillet over medium heat until sizzling.
- Briefly dip each bread slice into the egg mixture on both sides.
- Cook in the skillet for 3-4 minutes per side until golden brown.
- In another pan, combine blueberries with a splash of water; cook until they burst into sauce.
- Cut the French toast into fingers and serve topped with Greek yogurt and blueberry sauce.
