Description

This creamy spinach tortellini bake is a comforting dish that combines cheesy tortellini with a flavorful beef sauce, perfect for dinner!

Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, diced
  • 2 garlic cloves, diced
  • 16 oz pasta sauce
  • 1 cup whipping cream
  • 2 lbs packaged tortellini
  • 1 tbsp garlic parsley salt
  • 1 tbsp dried parsley
  • 2 cups spinach, chopped
  • 1 cup Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and bring a large pot of salted water to boil. Cook the tortellini until just shy of al dente (about 2 minutes less than package instructions) as they’ll continue cooking in the oven.
  2. Heat a large skillet over medium heat and add the ground beef, breaking it apart with a wooden spoon. Brown for about 5 minutes until no longer pink.
  3. Add the diced onion to the beef and sauté until translucent, about 3-4 minutes. Toss in the diced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the pasta sauce and whipping cream, stirring to combine. Add the garlic parsley salt and dried parsley, then bring the mixture to a gentle simmer for 2-3 minutes until slightly thickened.
  5. Fold in the chopped spinach and allow it to wilt into the sauce. The sauce might look quite liquid at this point, but don’t worry – it will thicken beautifully during baking.
  6. Drain the tortellini and add it to the sauce, gently folding everything together until the pasta is well coated. Transfer the mixture to a 9×13 inch baking dish.
  7. Sprinkle the Parmesan cheese evenly over the top and bake uncovered for 20-25 minutes until the edges are bubbling and the cheese forms a golden crust.
  8. Let the bake rest for 5-10 minutes before serving.

Notes

  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to substitute the ground beef with ground turkey or a plant-based alternative for a lighter option.
