- 2 large pears
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1/2 cup milk
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F and grease an 8-inch round cake pan or springform pan.
- Peel, core, and thinly slice the pears, then set them aside.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy.
- Add the eggs one at a time, mixing well after each one.
- Mix in the vanilla extract and lemon zest.
- Add the dry ingredients in batches, alternating with the milk, and mix just until the batter comes together.
- Fold half of the sliced pears gently into the batter.
- Spread the batter into the prepared pan and arrange the remaining pear slices over the top.
- Bake for 40 to 45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 15 minutes before removing.
- Dust with powdered sugar before serving.

- For extra flavor, add a pinch of nutmeg or a handful of chopped nuts.
