Description

A delicious pear cake that is moist and flavorful, perfect for any occasion.


Ingredients

  • 2 large pears
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/2 cup milk
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch round cake pan or springform pan.
  2. Peel, core, and thinly slice the pears, then set them aside.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy.
  5. Add the eggs one at a time, mixing well after each one.
  6. Mix in the vanilla extract and lemon zest.
  7. Add the dry ingredients in batches, alternating with the milk, and mix just until the batter comes together.
  8. Fold half of the sliced pears gently into the batter.
  9. Spread the batter into the prepared pan and arrange the remaining pear slices over the top.
  10. Bake for 40 to 45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  11. Let the cake cool in the pan for 15 minutes before removing.
  12. Dust with powdered sugar before serving.
