- 8 oz cream cheese, softened
- 4 tbsp unsalted butter, softened
- 1/3 cup powdered keto-friendly sweetener
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- 1/4 cup unsweetened shredded coconut
- 1 pinch salt
Instructions
- Let the cream cheese and butter soften at room temperature so they mix smoothly.
- Add the cream cheese and butter to a mixing bowl and beat until light and creamy.
- Mix in the powdered keto-friendly sweetener, vanilla extract, heavy cream, and salt until the mixture is smooth and fluffy.
- Chill the mixture for 20 to 30 minutes if it feels too soft to shape.
- Scoop the mixture into small portions and roll into 12 bite-sized balls.
- Roll each fat bomb in unsweetened shredded coconut if using.
- Place them on a lined plate or tray and chill for 1 hour, or until firm.
- Serve cold and store leftovers in the refrigerator.
