Ingredients

  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1/3 cup powdered keto-friendly sweetener
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1/4 cup unsweetened shredded coconut
  • 1 pinch salt

Instructions

  1. Let the cream cheese and butter soften at room temperature so they mix smoothly.
  2. Add the cream cheese and butter to a mixing bowl and beat until light and creamy.
  3. Mix in the powdered keto-friendly sweetener, vanilla extract, heavy cream, and salt until the mixture is smooth and fluffy.
  4. Chill the mixture for 20 to 30 minutes if it feels too soft to shape.
  5. Scoop the mixture into small portions and roll into 12 bite-sized balls.
  6. Roll each fat bomb in unsweetened shredded coconut if using.
  7. Place them on a lined plate or tray and chill for 1 hour, or until firm.
  8. Serve cold and store leftovers in the refrigerator.
