This delicious peppermint mocha parfait is perfect for the holidays, combining layers of rich chocolate pudding, cookies, and whipped topping.

- 2 boxes instant chocolate pudding mix
- 4 cups cold milk
- 2 teaspoons instant espresso powder
- 1 teaspoon peppermint extract
- 2 cups whipped topping
- 20 chocolate sandwich cookies, crushed
- 1/4 cup mini chocolate chips
- 1/4 cup crushed peppermint candies
- 2 tablespoons chocolate syrup
Instructions
- In a large bowl, whisk the instant chocolate pudding mix with the cold milk until smooth and slightly thickened.
- Stir in the instant espresso powder until fully dissolved.
- Add the peppermint extract and mix gently until the flavor is evenly distributed.
- Set out the whipped topping, crushed chocolate sandwich cookies, mini chocolate chips, and crushed peppermint candies.
- Spoon a layer of crushed cookies into the bottom of 6 serving glasses or jars.
- Add a layer of peppermint mocha pudding over the cookies.
- Spoon a layer of whipped topping over the pudding.
- Repeat the layers until the glasses are full, ending with whipped topping on top.
- Sprinkle with mini chocolate chips and crushed peppermint candies.
- Drizzle lightly with chocolate syrup.
- Chill for at least 1 hour before serving.
