Description

A delicious creamy chicken penne pasta dish filled with sun-dried tomatoes and spinach.


Ingredients

  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • Dried basil and oregano for seasoning

Instructions

  1. Cook penne pasta in boiling salted water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season diced chicken with salt and pepper; cook until browned (6-8 minutes). Remove and set aside.
  3. Sauté minced garlic and sun-dried tomatoes in the same skillet for 2-3 minutes until fragrant.
  4. Lower heat, add heavy cream, dried basil, and oregano; simmer for 3-5 minutes until thickened.
  5. Return chicken to the skillet along with spinach and cooked pasta; toss to combine.
  6. Stir in Parmesan cheese until melted. Serve garnished with fresh basil.

Notes

  • For best results, use high-quality sun-dried tomatoes.
  • Fresh basil can be added on top for extra flavor.
