Description

A delicious dessert combining cookie cups filled with vanilla pudding and topped with chocolate ganache.


Ingredients

  • 1 package refrigerated sugar cookie dough
  • 1 package (3 ounces) instant vanilla pudding mix
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
  2. Press Dough: Slice the cookie dough into 24 equal slices. Press each slice into the bottom and up the sides of each muffin cup.
  3. Bake the Cookie Cups: Bake the cookie cups for 8-10 minutes, or until lightly golden brown. Remove from the oven and gently press down the center of each cookie cup with the back of a spoon to create a well. Allow to cool completely.
  4. Prepare the Pudding: In a medium bowl, whisk together the vanilla pudding mix and milk until thickened. Spoon the pudding into each cookie cup.
  5. Make the Chocolate Ganache: In a small saucepan, heat the heavy cream until just simmering. Remove from heat and stir in the chocolate chips until melted and smooth.
  6. Spoon the chocolate ganache over the pudding-filled cookie cups.
  7. Serve: Refrigerate the cookie bites for at least 30 minutes, or until set. Remove from the muffin tin and serve.

Notes

  • The cookie cups can be prepared a day in advance and stored in the fridge until serving.
  • For extra flavor, consider adding a splash of vanilla extract to the pudding mixture.
