Chocolate Pudding Cookie Cups

Description

Delicious chocolate pudding-filled cookie cups that are perfect for any occasion.


Ingredients

Scale
  • 1 package refrigerated sugar cookie dough
  • 1 package (3 ounces) instant vanilla pudding mix
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin.

  2. Slice the cookie dough into 24 equal slices. Press each slice into the bottom and up the sides of each muffin cup.

  3. Bake the cookie cups for 8-10 minutes, or until lightly golden brown. Remove from the oven and gently press down the center of each cookie cup with the back of a spoon to create a well. Allow to cool completely.

  4. In a medium bowl, whisk together the vanilla pudding mix and milk until thickened. Spoon the pudding into each cookie cup.

  5. In a small saucepan, heat the heavy cream until just simmering. Remove from heat and stir in the chocolate chips until melted and smooth.

  6. Spoon the chocolate ganache over the pudding-filled cookie cups.

  7. Refrigerate the cookie bites for at least 30 minutes, or until set. Remove from the muffin tin and serve.

  • Store any leftovers in an airtight container in the refrigerator.
  • These cookie cups can be served with whipped cream for an extra treat.
