Description
Delicious mini cookie cups filled with creamy vanilla pudding and topped with rich chocolate ganache.

- 1 package refrigerated sugar cookie dough
- 1 package (3 ounces) instant vanilla pudding mix
- 1 cup milk
- 1/2 cup heavy cream
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
- Slice the cookie dough into 24 equal slices. Press each slice into the bottom and up the sides of each muffin cup.
- Bake the cookie cups for 8-10 minutes, or until lightly golden brown. Remove from the oven and gently press down the center of each cookie cup with the back of a spoon to create a well. Allow to cool completely.
- In a medium bowl, whisk together the vanilla pudding mix and milk until thickened. Spoon the pudding into each cookie cup.
- In a small saucepan, heat the heavy cream until just simmering. Remove from heat and stir in the chocolate chips until melted and smooth.
- Spoon the chocolate ganache over the pudding-filled cookie cups.
- Refrigerate the cookie bites for at least 30 minutes, or until set. Remove from the muffin tin and serve.
Notes
- These cookie cups can be made ahead of time and stored in the refrigerator.
- For extra flavor, consider adding a pinch of salt to the ganache.
