Description

Delicious flatbreads topped with pesto, shredded chicken, fresh mozzarella, and tomatoes.


Ingredients

Scale
  • 2 cups cooked, shredded chicken (use leftover rotisserie chicken for speedy prep)
  • 1/2 cup pesto (store-bought or homemade)
  • 8 ounces fresh mozzarella cheese (sliced)
  • 2 medium tomatoes (sliced)
  • fresh basil leaves (for garnish)
  • 2 pieces flatbread (store-bought, 1012 inches each)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread 1/2 cup of pesto evenly over the flatbread.
  3. Layer 2 cups of shredded chicken over the pesto.
  4. Add 8 ounces of sliced fresh mozzarella and 2 sliced tomatoes on top of the chicken.
  5. Bake for 15-20 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh basil before slicing and serving.

Notes

  • Using leftover rotisserie chicken can save time.
