Ingredients

- 2 cups cooked, shredded chicken (use leftover rotisserie chicken for speedy prep)
- 1/2 cup pesto (store-bought or homemade)
- 8 ounces fresh mozzarella cheese (sliced)
- 2 medium tomatoes (sliced)
- fresh basil leaves (for garnish)
- 2 pieces flatbread (store-bought, 10–12 inches each)
Instructions
- Preheat your oven to 400°F (200°C).
- Spread 1/2 cup of pesto evenly over the flatbread.
- Layer 2 cups of shredded chicken over the pesto.
- Add 8 ounces of sliced fresh mozzarella and 2 sliced tomatoes on top of the chicken.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before slicing and serving.
Notes
- Using leftover rotisserie chicken can save time.
- Feel free to customize with your favorite toppings.
