Description

A delicious creamy dish featuring peas and cheese, perfect as a side dish or a main course.


Ingredients

  • 1 pound frozen peas
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced, or 1 tbsp garlic powder)
  • Kosher salt and fresh ground pepper (to taste)
  • 8 ounces cream cheese (cubed, use light)
  • 1/3 cup milk (2% or whole)
  • 1/2 cup shredded cheddar cheese (low fat or fat free)
  • 3 tablespoons chopped parsley
  • 1 teaspoon chili flakes (or to taste (optional))

Instructions

  1. Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add in the 1 pound of frozen peas and stir frequently until thawed.
  3. Stir in the 3 minced garlic cloves, Kosher salt, and fresh ground pepper, and sauté for 3-4 minutes.
  4. Add in the 8 ounces of cream cheese and 1/3 cup of milk, and mix until fully combined, about 2-3 minutes.
  5. Over medium heat, stir in the 1/2 cup of shredded cheddar cheese and cook until all the cheese melts and the mixture thickens, about 3-4 minutes.
  6. Remove from heat and serve garnished with 3 tablespoons of chopped parsley and 1 teaspoon of chili flakes, if desired.
