A delicious creamy dish featuring peas and cheese, perfect as a side dish or a main course.
Ingredients

- 1 pound frozen peas
- 2 tablespoons olive oil
- 3 cloves garlic (minced, or 1 tbsp garlic powder)
- Kosher salt and fresh ground pepper (to taste)
- 8 ounces cream cheese (cubed, use light)
- 1/3 cup milk (2% or whole)
- 1/2 cup shredded cheddar cheese (low fat or fat free)
- 3 tablespoons chopped parsley
- 1 teaspoon chili flakes (or to taste (optional))
Instructions
- Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add in the 1 pound of frozen peas and stir frequently until thawed.
- Stir in the 3 minced garlic cloves, Kosher salt, and fresh ground pepper, and sauté for 3-4 minutes.
- Add in the 8 ounces of cream cheese and 1/3 cup of milk, and mix until fully combined, about 2-3 minutes.
- Over medium heat, stir in the 1/2 cup of shredded cheddar cheese and cook until all the cheese melts and the mixture thickens, about 3-4 minutes.
- Remove from heat and serve garnished with 3 tablespoons of chopped parsley and 1 teaspoon of chili flakes, if desired.

- This dish can be served as a side or as a main dish.
- Adjust chili flakes according to your spice preference.
