Description

Rich and velvety French silk ice cream made with chocolate and cream.

Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 6 oz semi-sweet chocolate, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Start by warming the milk and heavy cream in a saucepan over medium heat. You don’t want it to boil—just gently heat it until it’s steaming. This step always feels calming, like the beginning of something good.
  2. In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes pale and slightly thickened. This is what gives creamy French silk ice cream its signature richness.
  3. Slowly pour a bit of the warm milk mixture into the egg mixture, whisking constantly. This tempers the eggs so they don’t scramble. Then, pour everything back into the saucepan.
  4. Cook the mixture over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Take your time here—it’s worth it for that silky texture.
  5. Remove from heat and stir in the melted chocolate, vanilla extract, and salt. The mixture will become smooth and glossy, with a deep chocolate aroma that’s hard to resist.
  6. Let the mixture cool completely, then refrigerate for at least 4 hours or until thoroughly chilled.
  7. Churn in an ice cream maker according to the manufacturer’s instructions. Once churned, transfer to a container and freeze for a few hours until firm.
  8. When you finally scoop it, you’ll see that signature silky texture that makes creamy French silk ice cream so special.

Notes

  • This ice cream is best enjoyed fresh after freezing.
  • For a more intense chocolate flavor, you can adjust the amount of chocolate used.
