Creamy Italian Sausage and Tortellini Soup

Description

A hearty and creamy soup made with Johnsonville Italian Sausages, cheese tortellini, and fresh spinach.


Ingredients

Scale
  • 5 Johnsonville Italian Mild Sausages
  • 23 Tablespoons olive oil
  • 1 small onion, (diced)
  • 23 teaspoons minced garlic
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 Tablespoon Italian seasoning
  • 2 (15 ounce) cans white beans (do not drain or rinse)
  • 15 ounce can fire roasted diced tomatoes with garlic
  • 32 ounce carton chicken stock
  • 20 ounce package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 5 ounces baby spinach (optional)

Instructions

  1. Cook sausages in Johnsonville grill and slice when finished cooking. UPDATED TO ADD: Since the grill featured in this article is no longer available to purchase, you can simply brown the sausages according to the package directions (in a skillet.)
  2. In a large pot over medium heat, heat oil. Add onion and cook, stirring, until soft, about 5 minutes.
  3. Add in minced garlic and cook for an additional minute.
  4. Season with salt, pepper and Italian seasoning.
  5. Stir in white beans, diced tomatoes, and chicken stock.
  6. Bring to a gentle boil and add tortellini and sliced sausages.
  7. Reduce heat to medium-low and simmer until tortellini is cooked and flavors start to meld, 18 to 20 minutes.
  8. Stir in heavy cream, cook for an additional 5 minutes.
  9. Finally, stir in spinach and cook until spinach has wilted, about 2-3 minutes.
  10. Taste-test soup for any additional seasoning (careful – it’s hot!) and add in additional salt, pepper or Italian seasoning, if necessary.
  11. Serve with freshly grated Parmesan cheese.

Notes

  • Can substitute any brand of Italian sausage.
  • For a lighter version, reduce heavy cream or use a cream alternative.
