- 1/4 cup low-sodium soy sauce
- 1/4 cup coconut vinegar
- 6 cloves fresh garlic, crushed
- 1 medium onion, chopped
- 1 tsp black peppercorns
- 2 bay leaves
- 1 cup water
- 2 tbsp cooking oil
Instructions
- Marinate chicken thighs in soy sauce and crushed garlic for at least 30 minutes.
- Heat oil in a large skillet over medium heat; sauté chopped onions until translucent.
- Add marinated chicken to the skillet; brown on both sides for about 5 minutes each.
- Pour in coconut vinegar and water; add bay leaves and peppercorns. Bring to a gentle boil, then reduce heat.
- Cover and simmer on low for 30-40 minutes until chicken is tender.
- Serve hot over rice or with crusty bread.
