Description

Delicious chicken fajitas with vibrant bell peppers and a perfect marinade for a quick weeknight meal.


Ingredients

  • 1 large red bell pepper
  • 1 large green bell pepper
  • 22 ½ pounds boneless, skinless chicken breasts
  • ½ medium onion (sliced into half moons)
  • 1 tablespoon oil
  • 8 Corn or flour tortillas
  • 1 teaspoon ancho chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cumin
  • 2 tablespoons neutral oil
  • 2 tablespoons fresh lime juice

Instructions

  1. Cut each bell pepper into thin strips.
  2. Cut the onion into half moons.
  3. Cut the chicken into strips.
  4. Add marinade ingredients to a medium bowl and mix well to combine.
  5. Add the chicken strips and let it sit for 10-15 minutes to marinate the chicken.
  6. Meanwhile, heat a large saucepan or large skillet.
  7. Once hot, add the oil.
  8. Cook the onion for 3-4 minutes, stirring occasionally.
  9. Add the chicken with the marinade and cook for 5 minutes, or until the chicken is no longer pink.
  10. Stir in the bell peppers and mix until combined.
  11. Let them cook for another 5-10 minutes, or until the peppers are softened.
  12. Serve immediately over corn or flour tortillas.
  13. Garnish with avocado, guacamole, and cilantro.

  • For extra flavor, marinate the chicken for longer if time permits.
