- 4 boneless skinless chicken breasts
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme leaves
- 2 tbsp butter
- 1 cup chicken broth
- 2 lbs russet potatoes, peeled and chopped
- ½ cup heavy cream
- Salt and pepper, to taste
- 2 tbsp brown sugar
- 1 tbsp balsamic vinegar
Instructions
- Prepare the chicken and potatoes.
- Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
- Combine minced garlic, chopped parsley, and thyme leaves in a small bowl. Rub this mixture all over the chicken.
- Let the chicken rest at room temperature for 10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Carefully place the chicken in the pan and sear for 5-6 minutes.
- Flip the chicken and cook for another 5-6 minutes. Add butter and baste the chicken.
- Once the internal temperature reaches 165°F, transfer the chicken to a plate.
- In the same skillet, add brown sugar and balsamic vinegar, stirring until the sugar dissolves.
- Add the chicken broth and scrape up any browned bits. Bring to a simmer and cook for 5-7 minutes.
- While the chicken cooks, place the potatoes in a large pot and cover with salted water. Bring to a boil.
- Reduce to a simmer and cook for 15-20 minutes until fork-tender.
- Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth.
- Serve the mashed potatoes onto each plate, place a chicken breast on top, and drizzle with sauce.
- Garnish with additional herbs if desired. Serve immediately.
