Description

A delicious and hearty dish featuring seared chicken breasts served over creamy mashed potatoes, drizzled with a flavorful balsamic sauce.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 2 tbsp butter
  • 1 cup chicken broth
  • 2 lbs russet potatoes, peeled and chopped
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar

Instructions

  1. Prepare the chicken and potatoes.
  2. Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
  3. Combine minced garlic, chopped parsley, and thyme leaves in a small bowl. Rub this mixture all over the chicken.
  4. Let the chicken rest at room temperature for 10 minutes.
  5. Heat olive oil in a large skillet over medium-high heat. Carefully place the chicken in the pan and sear for 5-6 minutes.
  6. Flip the chicken and cook for another 5-6 minutes. Add butter and baste the chicken.
  7. Once the internal temperature reaches 165°F, transfer the chicken to a plate.
  8. In the same skillet, add brown sugar and balsamic vinegar, stirring until the sugar dissolves.
  9. Add the chicken broth and scrape up any browned bits. Bring to a simmer and cook for 5-7 minutes.
  10. While the chicken cooks, place the potatoes in a large pot and cover with salted water. Bring to a boil.
  11. Reduce to a simmer and cook for 15-20 minutes until fork-tender.
  12. Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth.
  13. Serve the mashed potatoes onto each plate, place a chicken breast on top, and drizzle with sauce.
  14. Garnish with additional herbs if desired. Serve immediately.
