- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon truffle oil
- 1/3 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Wash and scrub the potatoes well, then cut them into even fry-shaped strips.
- Soak the cut potatoes in cold water for 30 minutes to remove excess starch.
- Drain the potatoes and dry them very well with paper towels or a clean kitchen towel.
- Place the potatoes in a large bowl and toss with olive oil, salt, black pepper, and garlic powder.
- Spread the fries in a single layer on a parchment-lined baking sheet.
- Bake at 425°F for 30 to 40 minutes, flipping halfway through, until golden and crisp.
- Transfer the hot fries to a serving bowl and drizzle with truffle oil.
- Sprinkle with grated Parmesan cheese and chopped parsley.
- Toss gently and serve immediately while hot and crisp.
