This hearty sausage and cannellini bean dish is perfect for a comforting meal.

- 1 pound sweet italian sausage
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic (sliced thin)
- 1 teaspoon dry italian seasoning
- 1/2 teaspoon red pepper flakes (+/- on heat preference)
- 2 (15-ounce) cans cannellini beans (rinsed under cold water until it runs clear)
- 1 (15-ounce) can fire roasted diced tomatoes (with juice)
- 1 cup chicken stock
- 1/4 cup grated pecorino romano cheese
- 1/2 teaspoon kosher salt
Instructions
- Start by preheating the oven to 375 degrees F; then add the sausage links to a sheet pan and cook for 30 minutes. While the sausage is cooking, you can gather and prepare the other ingredients.
- After the sausage is done, remove the pan from the oven and slice each link into 1/2-inch rounds; then heat the oil in a large skillet set over medium heat.
- Next, add the sliced sausage, garlic, Italian seasoning and red pepper flakes; then cook for 1–2 minutes, stirring occasionally, until the sausage is fully cooked through and lightly browned with a crisp edge on both sides.
- Finally, stir in the cannellini beans, fire-roasted tomatoes and chicken broth.
- Let the mixture simmer for about 5 minutes, allowing the flavors to meld; then add the grated cheese and salt and stir until everything is well combined.
Notes
- This dish can be served with crusty bread for a complete meal.
- Adjust the red pepper flakes according to your heat preference.
