Description

This hearty sausage and cannellini bean dish is perfect for a comforting meal.


Ingredients

  • 1 pound sweet italian sausage
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic (sliced thin)
  • 1 teaspoon dry italian seasoning
  • 1/2 teaspoon red pepper flakes (+/- on heat preference)
  • 2 (15-ounce) cans cannellini beans (rinsed under cold water until it runs clear)
  • 1 (15-ounce) can fire roasted diced tomatoes (with juice)
  • 1 cup chicken stock
  • 1/4 cup grated pecorino romano cheese
  • 1/2 teaspoon kosher salt

Instructions

  1. Start by preheating the oven to 375 degrees F; then add the sausage links to a sheet pan and cook for 30 minutes. While the sausage is cooking, you can gather and prepare the other ingredients.
  2. After the sausage is done, remove the pan from the oven and slice each link into 1/2-inch rounds; then heat the oil in a large skillet set over medium heat.
  3. Next, add the sliced sausage, garlic, Italian seasoning and red pepper flakes; then cook for 1–2 minutes, stirring occasionally, until the sausage is fully cooked through and lightly browned with a crisp edge on both sides.
  4. Finally, stir in the cannellini beans, fire-roasted tomatoes and chicken broth.
  5. Let the mixture simmer for about 5 minutes, allowing the flavors to meld; then add the grated cheese and salt and stir until everything is well combined.

  • This dish can be served with crusty bread for a complete meal.
