Description

A delicious whipped cream cake topped with fresh strawberries.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • ¾ cup whole milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar (for whipping cream)
  • 2 cups fresh strawberries, sliced
  • Additional strawberries for decoration

Instructions

  1. Set your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In another bowl, whisk together the eggs, granulated sugar, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  5. Pour the batter evenly into the prepared cake pans, smoothing the tops with a spatula.
  6. Place the pans into the oven and bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to wire racks to cool completely.
  8. In a chilled bowl, whip the heavy cream and powdered sugar until soft peaks form.
  9. Once the cakes are fully cooled, place one layer on a serving plate. Spread a layer of whipped cream on top and arrange sliced strawberries.
  10. Place the second cake layer on top and cover the entire cake with whipped cream. Decorate with additional fresh strawberries on top.
  11. Refrigerate for about 30 minutes to allow the flavors to meld before serving.

  • You can substitute other fruits for the strawberries if desired.
