Description
A delicious whipped cream cake topped with fresh strawberries.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 large eggs
- ¾ cup whole milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 tablespoon powdered sugar (for whipping cream)
- 2 cups fresh strawberries, sliced
- Additional strawberries for decoration
Instructions
- Set your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, whisk together the eggs, granulated sugar, milk, vegetable oil, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Pour the batter evenly into the prepared cake pans, smoothing the tops with a spatula.
- Place the pans into the oven and bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to wire racks to cool completely.
- In a chilled bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Once the cakes are fully cooled, place one layer on a serving plate. Spread a layer of whipped cream on top and arrange sliced strawberries.
- Place the second cake layer on top and cover the entire cake with whipped cream. Decorate with additional fresh strawberries on top.
- Refrigerate for about 30 minutes to allow the flavors to meld before serving.
Notes
- This cake is best served chilled.
- You can substitute other fruits for the strawberries if desired.
