Description

A simple and delicious recipe for roasted asparagus, perfect as a side dish.


Ingredients

Scale
  • 1 lb asparagus stalks, woody ends trimmed
  • 2 tbsp olive oil
  • ½ tsp sea salt + more to taste
  • ½ tsp fresh ground black pepper + more to taste

Instructions

  1. Preheat oven to 425°F (220°C). For easy cleanup: line a large sheet pan or baking dish with foil or parchment paper.
  2. Add asparagus to the baking sheet. Drizzle oil over the top then sprinkle over salt and pepper. Toss together with your hands until each stalk is coated in oil. Spread out in an even layer across the baking sheet.
  3. Bake in the middle of the oven for 12-15 minutes until the ends are crisp.
  4. Season with more salt and pepper if desired and serve.
  5. Cool leftover asparagus to room temperature then store in an airtight container in the fridge. Eat within 4 days.
