Description

Delicious grilled chicken skewers marinated in BBQ sauce, perfect for summer cookouts.


Ingredients

  • 2 pounds chicken thighs or breasts, cut into even chunks
  • 1 bell pepper, cut into squares (optional)
  • 1 red onion, cut into chunks (optional)
  • 1 cup BBQ sauce
  • 2 tablespoons oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  1. Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  2. In a bowl, mix 1/3 cup BBQ sauce with oil, vinegar, garlic powder, paprika, salt, and pepper. Add chicken and toss to coat. Let sit for 20 to 30 minutes.
  3. Thread chicken onto skewers, alternating with veggies if using for a colorful presentation.
  4. Preheat the grill to medium-high and clean lightly oiled grates to prevent sticking.
  5. Grill skewers for about 10 to 14 minutes, turning every few minutes, until fully cooked.
  6. Brush on more BBQ sauce during the last 2 to 3 minutes for extra glaze.
  7. Ensure that the chicken reaches an internal temperature of 165°F before removing from the grill.
