- 2 pounds chicken thighs or breasts, cut into even chunks
- 1 bell pepper, cut into squares (optional)
- 1 red onion, cut into chunks (optional)
- 1 cup BBQ sauce
- 2 tablespoons oil
- 1 tablespoon apple cider vinegar or lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (optional)
- Salt and pepper to taste
Instructions
- Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
- In a bowl, mix 1/3 cup BBQ sauce with oil, vinegar, garlic powder, paprika, salt, and pepper. Add chicken and toss to coat. Let sit for 20 to 30 minutes.
- Thread chicken onto skewers, alternating with veggies if using for a colorful presentation.
- Preheat the grill to medium-high and clean lightly oiled grates to prevent sticking.
- Grill skewers for about 10 to 14 minutes, turning every few minutes, until fully cooked.
- Brush on more BBQ sauce during the last 2 to 3 minutes for extra glaze.
- Ensure that the chicken reaches an internal temperature of 165°F before removing from the grill.

- For added flavor, marinate the chicken overnight.
