Description

A delicious slow cooker dish featuring tender chicken breasts cooked in a savory cranberry sauce.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (14 oz) whole cranberry sauce
  • 1 cup chicken broth
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch (for thickening, optional)
  • Fresh parsley, chopped

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add diced onion, sliced carrots, and chopped celery around the chicken.
  3. In a medium bowl, whisk together cranberry sauce, chicken broth, minced garlic, thyme, paprika, salt, and pepper.
  4. Pour this mixture over the chicken and vegetables in the slow cooker.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and tender.
  6. Optional: If you prefer a thicker sauce, remove 1/4 cup of the cooking liquid and whisk it with 2 tablespoons of cornstarch in a small bowl. Stir this slurry back into the slow cooker and cook for an additional 15-20 minutes on HIGH until thickened.
  7. Use two forks to shred the chicken in the pot.
  8. Garnish with fresh parsley before serving.
